Banana Bread

1 cups sugar 1/2 cup butter (melted) 3 eggs 2 cups all purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 3 or 4 bananas  1 cup nuts (optional) 1 teaspoon vanilla Mix first 3 ingredients, then add flour (with soda and salt added), vanilla, and bananas.  Mix in nuts. Bake at 350 for an hour or less depending on oven.  Small loaf pan may not take an hours.

Best Banana Pudding

 3 oz instant vanilla pudding 1 1/2 cup milk 8 oz cool whip Vanilla wafers (as many as needed) Bananas (I used 4) Mix pudding and milk.  Let set 5 minutes, then fold in cool whip.  Start with pudding mixture on the bottom of a bowl, then bananas, then vanilla wafers.  End with wafers on top.

St. Patrick’s Day Cake

1 cup water 1 box yellow cake mix 1 box instant pistachio pudding 4 eggs 1/4 cup oil 1/2 teaspoon almond flavoring 7 drops green food coloring Mix all and bake in bundt pan for 40 minutes at 350 degrees. I sprinkle powder sugar on top and sometimes add green sprinkles 

Blackened Salmon Stuffed with Spinach & Parmesan

- 4 salmon fillets (6 oz each)   - 1 tablespoon olive oil   - 1 teaspoon smoked paprika   - 1/2 teaspoon garlic powder   - 1/2 teaspoon onion powder   - 1/4 teaspoon cayenne pepper (optional)   - Salt and black pepper, to taste   For the Filling:   - 2 cups fresh spinach, sautéed   - 1/2 cup shredded Parmesan cheese   - 1/2 cup shredded mozzarella cheese   - 1 clove garlic, minced   For the Sauce:   - 2 tablespoons unsalted butter   - 1 tablespoon lemon juice   Directions:   1. Preheat your oven to 375°F (190°C).   2. In a small bowl, mix paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub the spice mixture onto the salmon fillets.   3. Sister Bobbies Thanksgiving Dressing

1 package Pepperidge Farm stuffing mix 2 pieces of toast  2 eggs 1 cup chopped celery 1/2 cup chopped onion (or more if you like) Pieces of turkey meat Turkey broth Sauté celery and onions in butter. Mix all of this together.  Pour broth in (I had to use some chicken broth too) and consistency should be like a cake mix.  Spray 2 quart dish with Pam and bake at 400 for about 45 - 50 minutes.  Cover with foil for first 30 minutes, then uncover for rest of time to let brown.  

Vegetable Beef Soup

Beef stew meat  Beef stock and water (for cooking meat) Frozen vegetables (small bag) Stewed  tomatoes (I just used half a can) Tomato bisque soup (half a can) Red potatoes (I used just 2) Teaspoon garlic powder 1/2 teaspoon onion powder Red pepper flakes (to taste) Bay leaf I cooked my beef in crock pot with beef stock and when it was done, I cut it into small pieces.  After it was done, I added small bag of frozen veggies, cut up potatoes, and added all the other ingredients.  Cooked until potatoes were done. This was the best I have ever made:)

Chicken Florentine

2 large chicken breasts cut in half lengthwise 1/2 teaspoon garlic powder Salt & pepper to taste Flour for dredging 1 tablespoon olive oil 2 tablespoons butter divided 3 cloves garlic minced  1/2 cup chicken broth 1/4 teaspoon Italian seasoning 1 cup heavy/whipping cream 2 cups (loosely packed) fresh baby spinach 1/2 cup freshly grated parmesan cheese I am going to double the chicken broth, cream, and spinach to have more gravy. Can use more garlic and Italian season also. Instructions Cut the chicken breasts in half lengthwise so you have 4 thinner pieces. Season each side of the chicken with the garlic powder and salt & pepper. Coat the chicken in flour on all sides. Add the oil and 1 tablespoon of the butter to a skillet over medium-high heat. Cook the chicken for 4-5 minutes/side until golden. Take the pan off the heat and remove the chicken to a plate. Return the pan to the heat and add the rest of the butter and the minced garlic.
